Why does bad odor happen with age?

That faint, musty, "the shirt still smells even after the wash" odor isn't dirt, and it isn't a hygiene problem. It's chemistry.

The culprit is a compound called nonenal. Starting around age 40, your skin produces more of a fatty acid called palmitoleic acid, while its natural antioxidant defenses fade. When the two meet oxygen, that fatty acid oxidizes and breaks down into 2-nonenal — a greasy, grassy-smelling compound with a "musty old book" character.

Is it actually strong enough for garlic and ginger, or does it just bruise them?

It cuts. The stainless blade spins fast enough to slice through a whole peeled garlic clove or a knob of fresh ginger cleanly — you get mince, not mush. Hard root vegetables like raw carrot work best cut into rough chunks first.

How much does the cup hold?

350ml, which is roughly a cup and a half. In practice that's a full medium onion, an entire head of garlic, or enough cilantro and jalapeño for a batch of salsa. Bigger jobs just take a second round, and each round is ten seconds.

Why not just use a knife?

Because a knife also means a cutting board, a peeler, counter space to work on, and three things to wash afterward. This is one cup that goes under the faucet. Most people who buy it aren't replacing their chef's knife — they're replacing the twenty minutes of setup and cleanup wrapped around it.

Why does it come with two different cups?

Because chopping and slicing need different shapes. The shorter bowl-shaped cup sits under the chopping blade for mince and dice. How do I clean it, and is it safe?

The cup twists off and rinses under the faucet — the included brush gets between the blades so you never have to run your fingers along an edge. The motor handle wipes down with a damp cloth. The blade physically cannot spin unless the cup is locked in and the button is held down, so nothing can activate while you're washing it.
